Tough question! I love season premieres because that means the show that we love is back but the season finales are usually the best episodes of the season so...... Gonna go with season premieres!
This is an impossible decision. Finales are always the best episodes but they have cliffhangers which leave me in unending agony for four months. Premieres are good but not as good as finales, but answer questions. Hmm. I'll go for finales purely because they're so good.
The problem is that we see more bad season premieres than finales because we usually give up on a show if it's bad before the end.
I think finales will often be a better judge of the quality of writing as they show how well everything has been planned and the future direction they are taking. Premieres, on the other hand, are usually trying to draw in a new audience so often have to explain the premise again and set the wheels in motion for future developments so the actual plots tend to be fairly generic and characterisation is left until later.
Therefore I'm going for finales but overall I think the best episodes of a show are about 3 to 5 before the season finales, where a lot of pieces in terms of backstory and character are put together

They're the ones that tend to answer all the questions that we have been wondering throughout the season - yet at the last minute (literally) something happens which has us asking 500 more. However at the same time, they're the episode which sends me mental for 4-5 months...
Season finales. For me usually it's more disappointing how they solve some the cliffhangers than how they created them. Though the best is a great season finale followed by a great premier.
Season premieres definitely. i hate season finales, because that means the hiatus has arrived, and 4 months of torture begins before i get my next fix of my favorite shows.
Not an easy decision, but I went with finales. In my experience, they're usually better than premieres. Plus, even in a relatively slow-moving show, a finale is most likely to actually provide answers to one or more of the series-spanning questions.
Season finales. They climax things to the edge, often having situations that completely spiral out of control, while season premieres usually don't have that edge. They may resolve a few issues, but premieres are mostly calm and collected and sorts out some of the situations introduced in the season finales. In addition, season finales are made to give us enough craziness to leave us wondering what will happen when the show returns. Season premieres tend not to have that suspense feeling to it.
Obviously, both are exciting events I look forward to. A premiere is a ton of fun because the characters and story you love are back after a long summer - it's like reuniting with old friends. :) But a finale (when done right) is HUGE, the explosive culmination of a season's worth of plots. Every time I sit down to watch a season finale, I get the good kind of chills - there's something really special about it. So I voted for finales.
It depends. For season one shows, the finales are almost always better than the premieres. I would say that is typically true of genre shows as well, although Supernatural did a great job on both in the earlier seasons. Teen Wolf really goes all out for premieres and finales as well. I guess premieres have that extra excitement which comes from ending the hiatus, but at the same time, that can cause expectations to be too high and leads to more "meh" feelings on first watch. Finales instead get you talking about them all hiatus long.
Good point. If it is a show with a large, active online fandom, then by the time the premiere airs, you've already discussed a thousand ways for the cliffhanger to be resolved and usually there's at least a couple of them that you like better than what is in the premiere. That can cause me to feel a little let down by the premiere.
Some series use the final episode of the season as denouement or a table setter for the following season. Those finales often can be a bit lackluster when compared to the penultimate episode.
Also, a bad season finale can absolutely ruin an entire season of a series. Look at Homeland as an example of this!
Many, if not most, pilots have the burden of delineating the show's world as well as introducing the characters and the episodes tend to lack in depth and pacing because of it. Some manage to have the perfect mixture of introduction, exposition and story, but it is still not necessarily a sign of a great series to be.
Over all I would say that finales have more depth of story, more moving pieces all fitting together, more drama and are usually better than premieres.
Although this is a weird question to which the only right answer is "it depends", for me it's finales, if only because as much as I enjoy premieres, I enjoy the shows the more involved in them I am and it takes me a while to get into that when the new season starts. Also finales typically have more going on.
As most have posted it really depends. It's all about the writing. Based on the fact it is very good writing - I tend a tiny bit more to premiers: when the season premier arrives I get totally excited, it is like coming home after a long voyage. A very good example for me is Strike Back S4. Great premier which quickly takes up speed, the finale could have been a series finale. Nevertheless I am rooting for another season.
Generally I do not enjoy cliffhangers on a finale, I want closure. In the past too many series were suddenly cancelled. Preparing a new plot or hinting at it is ok though. That is what I appriciate about GOT.

I loved the finale and was really excited about Zombie Nick, but the premiere disappointed me a little. White Collar also tends to leave its characters in impossible situations at the finale but then in the premiere that predicament is cleaned up quickly so another can take its place.
Returning shows often have quick fixes in their premieres as well. Suddenly there is a relatively easy solution to what the characters simply could not come up with in the finale. This is especially problemsome if there is little time gap between the finale and the premiere.

On the one hand you have a Season Premiere which typically resolves something left as a cliffhanger from last season, as well as set up the rest of the season. Plus you have the knowledge that you have a whole season to look forward to.
But on the other hand you have a Season Finale which is what the entire season has culminated towards and should, theoretically (cause not always), be the best episode of the season that make us crave the next season and agonize until we get it.
But there's some shows that have better premieres than finales. For example, Grey's Anatomy always has excellent finales and tries to hype up their premieres but they never really live up to the hype. On the other hand, Gossip Girl always had better premieres than finales, in my opinion. Some of their most iconic moments happened in the premieres as opposed to the finales and they did a lot of cool location stuff like the Hamptons episode and the Paris episodes.
Season Finales. I love how Season Premieres set everything up but they aren't always impressive, while a finale usually ties everything up but leaves you with more questions, they leave you wanting more because a lot of s*** goes down in a finale.

Many shows also build up huge expectations leading into their season finale, though...which can sometimes lead to disappointments, as well.
